These sweet potato breakfast cookies are made with just a few simple nutritious ingredients including whole grain oats, cooked sweet potato, and omega-3 rich chia and hemp seeds.
Ingredients
2 cups
One Degree Organic Sprouted Rolled Oats
2 large over-ripe bananas, mashed
1 cup unsweetened sweet potato puree
¼ cup maple syrup
2 tablespoons chia seeds
2 tablespoons hemp seeds
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
pinch of sea salt
Optional additions:
⅓ cup chopped dates
⅓ cup chocolate chips
Instructions
Combine all ingredients in a large bowl. Stir in any additions. Allow to sit for 5 minutes.
Bake at 350 for 15-17 minutes.
